Salt is a flavour enhancer. It takes the flavour of your food (or beverage) from meh to miraculous.  Of course, salt can be overdone. So, we kept the salt light so it in no way overpowers the caramel but again, takes up the taste a few notches.  The salt adds another layer and depth of flavour. The addition of salt also softens the sweetness of the caramel. You’ll find our syrup won’t have the cloying sweetness that so many caramels have.
